Biography:
Mr.Liu is a second-Year PhD student in food sciences at Deakin University, Australia. His research focuses on developing fermentation systems for LAB to ferment GM, with an emphasis on changes in the content and composition of phenolics. It aims to explore the potential metabolic pattern through which LAB metabolize phenolics in GM. Utilizing advanced analytical instruments, simulated gastrointestinal digestion, colonic fermentation models, and metagenomics, the study investigates the health benefits of fermented GM. He has published 13 research and review articles in SCI journals, three of which are first author.
